Hey it’s your good old Kapn’ Bone here with this weeks insider food review.
Tonight Buddha and I had the pleasure to visit Chef Frank Demolfetta. Formally of Meza Luna and the classic Bella’s in downtown Melbourne. His latest endeavor is “The Chef’s Corner” tucked conveniently in Melbourne Beach Market at 302 Ocean Avenue. Charlie and his knowledgeable staff have been here for thirty years bringing you what no other “Box” supermarket can, from a twenty foot long olive bar to seven different kind’s of phyllo dough. As you walk into the store and head to the Deli counter you pass hundreds of bottles of wine, it then opens up to The Chef’s Corner.
The first thing that invades your senses is the wonderful smell, from the fresh breads made every hour to the twenty plus choices of pizza, words can’t describe how good they are.
Frank is truly a genius let me digress. When you are raised in a true Italian home, cooking well is just part of the deal. Both Frank and I were raised in similar households we both were trained in our family’s restaurants. The difference is that Frank has taken his formula to new heights. The thing that kills most restaurants is costs. When the cost’s rise the quality usually drops and then you do less business and the next thing is your favorite little spot disappears.
Frank has done away with most of that. No wait staff or any other overhead for that matter and that leaves him to do what he does best, cook.
Chef’s Corner offers every Italian dish you could ask for from Eggplant Parmigiana to Classic Spaghetti and Meatballs. Also available is a hot bar filled with Stuffed Peppers Roasted Chicken and Sausage and Peppers and all to go. Do your self a favor and stop in and see Chef Frank, my Gumbadi and let him show you what you have been missing in your life!
